Clear, glassy hard candy is a study in controlling crystallisation. Get it wrong and the sweets turn cloudy, sticky or grainy on the shelf. High maltose syrup is one of the most effective tools for keeping that crystal growth in check.
Why maltose helps
High maltose syrup contains a blend of sugars that interferes with sucrose crystallisation. By occupying the sugar lattice, it keeps the candy in a glassy, non-crystalline state, protecting clarity and crunch. It also reduces hygroscopicity, so the sweets resist picking up moisture from the air.
Reading the DE
DE, or dextrose equivalent, tells you how far the starch has been hydrolysed. For hard candy, a lower DE syrup generally gives more body and better crystallisation control, while a higher DE adds sweetness and reduces viscosity. The right value depends on your cook temperature and target texture.
- Lower DE: more body, better clarity protection, less sweet.
- Higher DE: sweeter, thinner, easier to pump.
- Blend: often the practical answer for a specific texture.
Dosing and process
Replace a portion of the sucrose with syrup rather than everything at once, and dissolve thoroughly under heat. Cool rapidly and temper the mass consistently. Small process drifts show up as haze weeks later, so keep the cook cycle repeatable.
Shelf life and packaging
Wrap promptly and use a moisture barrier film. Candy that stays dry stays clear; candy that breathes goes sticky. Packaging is part of the recipe.
