Maltitol ships as a syrup and as a crystalline powder, and candy makers often need both. The choice changes how the batch cooks, how it sets, and how it ages — so it should be made deliberately.
When syrup wins
Maltitol syrup is the base for hard candy, chewy candy and anything that benefits from a controlled sugar profile. Blending different syrups lets you tune viscosity, control crystallisation and hit the final texture you want. Syrup also helps prevent the graininess that appears when a candy mass crystallises too fast.
When powder wins
Maltitol powder is used for dry blending, for seeding crystal structure, and for products where you want a specific texture and low moisture. Coatings, tableting and some chocolate applications favour the crystalline form.
- Hard candy: syrup, with careful DE and moisture control.
- Chewy candy: syrup blends for chew and shelf life.
- Coating/tableting: powder for dryness and precise dosing.
Processing and cost
Syrup costs less per unit of sweetener but you move and store water; powder is more concentrated but pricier and needs dry conditions. Match the form to your process and your warehouse, then validate with a production trial before scaling.
