Sugar-free chocolate lives or dies on its bulk sweetener. Maltitol is the most widely used because it mimics sucrose closely in sweetness and body, but it does not behave identically in the tempering room. Knowing the differences avoids a batch of dull, sticky bars.
Sweetness and body
Maltitol is roughly 90% as sweet as sucrose with a clean, sugar-like profile and good body. That makes it the natural drop-in for milk and dark chocolate where mouthfeel matters. It also carries about half the calories, which suits reduced-calorie claims.
Tempering behaviour
Maltitol crystallises differently from sucrose, and maltitol-based chocolate can be more sensitive to moisture and over-heating. Tempering windows are narrower, and residual moisture leads to a grainy or sticky texture. Control humidity in the room and avoid water contamination from fruit inclusions.
The laxative threshold
Polyols including maltitol are only partly absorbed and can cause digestive discomfort in quantity. Many markets require an “excessive consumption may cause laxative effects” warning above a threshold on the pack. This affects both labelling and realistic serving size.
Labelling and claims
Polyols must be declared with their energy value, and sugar-free claims have specific criteria. Confirm the destination market’s rules, then design portion size and pack communications so the claim stays compliant and the experience stays pleasant.
