Sorbitol vs Maltitol: Choosing the Right Bulk Sweetener for Sugar-Free Products

Sorbitol Powder Price Per kg in 2026: Bulk Buying Benchmarks

Sorbitol and maltitol are the two workhorses of sugar-free formulation, and buyers often treat them as interchangeable. They are not. Both are polyols that add bulk and keep sucrose out of a recipe, but they diverge on sweetness, melting behavior, moisture affinity and glycemic response in ways that decide whether a product succeeds on the shelf. This guide compares them on the points that matter most to product developers and procurement teams.

How the Two Polyols Differ at the Molecular Level

Sorbitol is a six-carbon sugar alcohol made by catalytically hydrogenating glucose, which turns the sugar’s aldehyde group into a hydroxyl group. The result is a molecule roughly half as sweet as sucrose. Maltitol is also a hydrogenation product, but it is built from maltose, a two-unit sugar, so its molecule is larger and its sweetness sits much closer to sucrose. That structural difference is the root of almost every practical distinction between the two.

Side-by-Side Comparison

The figures below are indicative values that suppliers commonly report for standard food grades. Confirm them against the batch certificate of analysis, because particle size, purity and the rest of your matrix shift the outcome.

Factor Sorbitol Maltitol
Sweetness vs sucrose about 50–60% roughly 75–90%
Glycemic index very low, around 9 moderate, around 35
Cooling sensation pronounced and minty slight
Heat behavior serviceable but less sugar-like close to sucrose in melting and setting
Water affinity high, hygroscopic moderate, more dimensionally stable
Common fit gum, mints, oral care, syrups chocolate, hard candy, baked goods

Where Maltitol Earns Its Place

Maltitol is the natural pick whenever the finished product has to mimic sucrose structure. Sugar-free chocolate is the clearest case: maltitol’s melting profile and crystallization behavior let it stand in for sucrose through conching and tempering, so the bar still snaps and coats the way consumers expect. Hard candy follows the same logic. A bulk agent that picks up little water keeps wrapped sweets from turning tacky in humid storage, and maltitol’s sugar-like setting gives the glassy bite that defines the category. In baked goods it contributes moisture, structure and a sweetness level that is easier to match to a conventional recipe.

Where Sorbitol Wins

Sorbitol rewards applications where a cool, clean sensation is a feature rather than a defect. Chewing gum is the archetype: sorbitol keeps the pellet or stick soft through its shelf life and delivers the cooling burst shoppers read as freshness. Mints, toothpaste and mouthwash rely on it for the same reason, since oral bacteria do not ferment it the way they ferment sucrose. Its strong water affinity is an asset in fillings, fondants and syrups that must stay moist, and its very low glycemic index suits products aimed at blood-sugar-conscious buyers.

Reformulating Without Losing Texture

Swapping polyol for sucrose at equal weight is the most common and most costly mistake. Sweetness, bulk and free water move independently, so plan on three corrections:

  • Sweetness. Sorbitol needs roughly twice the weight of sucrose to match sweetness; maltitol needs noticeably less. Many formulas top up with a high-intensity sweetener rather than overloading the polyol.
  • Bulk and texture. Replacing the volume sucrose once occupied may require a bulking agent or a change in piece weight.
  • Moisture. Sorbitol’s hygroscopicity can make a product sticky or cause packaging fogging, so a humectant rebalance or a better moisture barrier is often needed.

Tolerance, Labeling and Market Rules

Both polyols are only partly absorbed, so a large serving can pull water into the bowel and cause bloating or a laxative effect. Individual tolerance varies, and maltitol is often less well tolerated than sorbitol at a comparable dose. Many markets require a statement along the lines of “excessive consumption may cause laxative effects” when a product could reasonably be eaten in quantity, and some set maximum levels. Confirm the rules of your destination market before the label is finalized.

Buyer tip: decide the primary constraint before comparing quotes — cooling effect, sugar-like melt, moisture control or a glycemic claim. Whichever polyol fits that constraint wins, and a small side-by-side trial usually settles any tie.

Frequently Asked Questions

Which one is sweeter, sorbitol or maltitol?

Maltitol is sweeter, typically reaching 75–90% of sucrose compared with about 50–60% for sorbitol. That gap is why the two are dosed differently even when they perform a similar bulking role.

Can I replace maltitol with sorbitol in chocolate?

Usually not without reformulating. Sorbitol does not melt and set like sucrose, so a chocolate made with it can lack snap and may feel gritty or cool on the tongue. Maltitol is the closer match for cocoa-based products.

Do these polyols raise blood sugar?

Both have a low glycemic impact compared with sucrose, but maltitol’s index is higher, around 35, against roughly 9 for sorbitol. Diabetic-friendly claims should rest on the finished product and local rules, not on the raw ingredient alone.

How can I limit the laxative effect?

Keep the polyol dose per serving modest, blend polyols where the recipe allows, and label honestly. Tolerance is individual, so a serving-size review is often more effective than switching ingredients.
