Caramel is a balance of sugar, dairy, fat and heat. The syrup you start with influences how quickly colour develops, how the batch flows and how the finished piece behaves on storage.
Choosing the syrup base
Glucose syrup is added to control crystallisation and adjust chewiness, while sucrose provides the bulk of the caramelisation. Higher-DE glucose syrups are more hygroscopic and give a softer, stickier caramel; lower-DE syrups give a firmer bite.
Cooking profile
Colour develops through both caramelisation and Maillard reactions. Milk proteins and reducing sugars drive browning, so the temperature curve matters as much as the final cook temperature. A slow rise gives more flavour; a fast rise favours light colour and clean sweetness.
Texture control
- Increase glucose syrup to reduce crystallisation and firmness
- Adjust fat and emulsifier to control chew and release
- Control final moisture to set hardness
- Cool on a defined curve to avoid graining
Batch consistency
Record Brix, cook temperature, vacuum level and colour at a fixed point in the process. Small differences in syrup solids shift the endpoint, so weigh syrups rather than measuring by volume.
Storage of finished product
Caramel picks up moisture readily. Use a barrier wrapper, control the packing room humidity and avoid temperature cycling that causes sugar bloom or sticking.
