Fructose is sweeter than glucose and is perceived earlier, while glucose brings body and a cleaner finish. Blending the two lets formulators tune sweetness, mouthfeel and cost without changing the total solids.
Sweetness profile
Fructose delivers a rapid sweetness peak, which reads as fresh in fruit drinks. Glucose and maltose contribute a rounder, slower sweetness and more body. A blend often tastes more balanced than either syrup alone at the same Brix.
Viscosity and handling
At equal solids, higher-fructose syrups are slightly less viscous, which can help with pumping and filling. Viscosity still depends strongly on temperature, so dose by weight and verify at line temperature.
Stability considerations
- Fructose is hygroscopic and can pick up moisture in humid filling rooms
- Acid plus heat increases colour formation, so pasteurisation time matters
- Blends should be stored below the temperature that promotes Maillard browning
- Keep tanks sealed to limit condensation on the surface
Formulation tips
Match the sweetness of the target profile first, then adjust total solids for body. Test at the finished Brix, not in a diluted bench sample, because sweetness perception changes with concentration and acidity.
Specifications to agree
Define fructose and glucose content, dry solids, pH, colour and sulphite content in the purchase specification. Ask for a certificate of analysis per lot and keep a retained sample for sensory comparison.
