The newest generation of sugar reduction leans on three ingredients: erythritol for bulk, allulose for a sugar-like taste and browning, and stevia for intense sweetness. Individually each has a flaw; blended, they cover for one another.
What each brings
- Erythritol: near-zero calorie bulk with a clean taste and low digestive impact, but a slight cooling effect and weak browning.
- Allulose: tastes and browns almost like sugar, minimal glycaemic impact, but limited availability and higher cost in some markets.
- Stevia (Reb M): very high sweetness and a clean label, but needs masking at higher doses.
Why blends work
Erythritol alone can taste thin and cool. Adding allulose restores sugar-like body and browning; a small amount of stevia lifts sweetness without extra bulk. The result is closer to sugar than any single ingredient can manage.
Formulating tips
Watch the total solids and water activity, especially in baked goods where allulose and erythritol behave differently from sucrose. Sweetness timing also matters: intense sweeteners can be perceived later than sugar, altering the finish. Taste early and often.
Label and cost
Clean-label blends appeal to consumers, but cost and supply of allulose and Reb M can be volatile. Build flexibility into the recipe so a single ingredient shortage does not stall production.
