Polyols all replace sugar, but they are not interchangeable. Sorbitol, maltitol and xylitol differ in sweetness, cooling sensation, glycaemic response and digestive tolerance. Choosing the right one begins with the product and the consumer promise.

- Sorbitol: ~60% as sweet as sucrose, strong humectant, moderate laxative effect. Great for keeping products moist.
- Maltitol: ~90% as sweet, closest to sugar in taste and body. Ideal for chocolate and candy.
- Xylitol: ~100% as sweet, pronounced cooling effect, dental benefits, higher cost.
Cooling and mouthfeel
Xylitol’s strong cooling suits mints and chewing gum; the same effect is unwelcome in milk chocolate, where maltitol reads as more neutral. Sorbitol brings less cooling than xylitol but more than maltitol, and its humectancy is unmatched.
Glycaemic response and tolerance
All three have a lower glycaemic impact than sucrose, but not equally, and all can cause digestive discomfort in large amounts — xylitol and sorbitol more readily than maltitol for some people. Serving size and a laxative warning requirement in many markets follow from this.
Cost and labelling
Maltitol and sorbitol are generally more economical than xylitol. Each needs declaration of energy value and, where applicable, warnings. Match the choice to the product’s format, the claim you want to make, and the price the market will accept.
