Chicharon is a texture product. Its whole value proposition — the shattering crunch — is also its greatest export weakness, because moisture and oxygen destroy it quietly on the voyage. Packaging is therefore the single biggest determinant of whether a container arrives as a premium snack or a softened disappointment.
Barrier film, not just a pretty bag
A standard single-layer film leaks moisture and oxygen over weeks. A metalised or foil-laminated structure with a proper seal dramatically slows both. For long-haul export, ask for the oxygen transmission rate (OTR) and water vapour transmission rate (WVTR) of the proposed structure and compare against your shelf-life target.
Nitrogen flushing
Replacing headspace air with nitrogen removes oxygen that drives rancidity in the frying oil. Flushed packs keep the aroma clean and extend shelf life without preservatives. Verify the gas flush with a headspace oxygen test on the first production lot.
- Target headspace oxygen below 2% for oil-rich snacks.
- Use a seal-through-contamination resistant film.
- Check seal integrity after the packing line runs at speed, not just at start-up.
Moisture and oil control
Fry moisture down to a stable level, cool fully before packing, and avoid over-filling the bag. Residual heat inside a sealed pack creates condensation that softens the crunch. A consistent fill weight also protects the product during transport.
Label and format choices
Stand-up pouches with a resealable zipper suit sharing formats; smaller single-serve bags suit convenience and impulse. Whatever the format, match the pack to the channel and confirm the destination market’s labelling requirements before artwork is final.
