Flavour is where chicharon competes. The base crunch is largely settled; what separates a listing that sells from one that lingers is the seasoning system and how well it survives the bag. In 2026 three families dominate buyer discussions: heat, sour, and dairy.
Heat that suits the market
Spicy sells, but spice is not universal. A chilli level that thrills one market is inedible in another. Style matters too: dry chilli powder reads differently from a fermented chilli paste. Build a ladder — mild, medium, hot — so a distributor can stock without betting everything on one intensity.
The sour and vinegar revival
Vinegar and acid-forward profiles are surging because they cut through the richness of fried pork skin and feel refreshing. Salt-and-vinegar, tamarind and citrus-lime blends all trade on the same principle. Acid also supports perceived freshness, which helps in hot climates.
- Classic: salt, garlic, black pepper.
- Sour: vinegar powder, tamarind, calamansi.
- Dairy: cheese, sour cream and onion, butter.
- Regional: adobo, chilli-lime, seaweed, barbecue.
Getting seasoning to stick
Tumbling with a light oil film before dusting improves adhesion. The seasoning particle size and the oil-to-powder ratio both matter. Over-oiling feels greasy; under-oiling means the flavour slides off.
Clean-label pressure
Buyers increasingly ask about natural colours (annatto, paprika, beetroot), no MSG, and recognisable ingredient lists. These are formulator decisions made long before the pack reaches the shelf, so raise them at the sampling stage rather than after artwork approval.
