A sample that photographs beautifully tells you almost nothing about how a maltose syrup will run on your line. The distance between a sample approval and a first purchase-order regret is usually a testing gap: too little material, a spec sheet never checked against the drum, or a sensory opinion standing in for data. This guide covers what to request and how to test it before committing to a container.
Ask for pilot-scale material, not a tasting jar
Half a litre proves colour and basic sweetness but cannot validate a filling line, a glaze station or a bakery batch. Request roughly 1–5 kg so a realistic pilot is possible. Just as important, ask for the sample to come from the same production batch as the certificate of analysis you are given, and ask for the production date. A supplier who cannot link a sample to its batch and its paperwork is already showing you the limits of their process control.
Read the specification before the jar arrives
The COA tells you which grade you are actually holding, and the grade decides how the syrup behaves. The fields below are the ones that most often determine success or failure at scale.
| Parameter | Typical range | Why it matters |
|---|---|---|
| Dry solids | Around 75–85% | Sets the water you must account for in the recipe |
| DE | Roughly 35–50 for standard grades | Indicates sweetness and reducing-sugar behaviour |
| Maltose on dry basis | Often 40–60%; higher in high-maltose grades | Defines crystallisation and browning behaviour |
| Colour (transmittance) | High transmittance for light products | Directly affects finished colour |
| pH | Typically around 4.5–6.0 | Compatibility with acidic formulas |
| Heavy metals and sulphite | Within local limits | Import compliance and your own spec |
| Microbiology | Plate, coliform, yeast and mould limits | Shelf life and due diligence |
Bench tests with predictive value
- Boil and caramelisation test: heat a small sample to your real process temperature and watch for scorching, foaming and colour drift. Suppliers’ syrups darken at different rates.
- Cold handling test: chill a sample to the coldest temperature your warehouse will see and note how fast it thickens or crystallises. Ask for viscosity at a fixed reference temperature.
- Anti-crystallisation check: boil a syrup-and-sugar solution and cool it slowly to confirm no premature recrystallisation in a glaze or filling.
- Humectancy test: store a baked or chewy sample for several days and compare softness retention against your reference syrup.
Independent verification pays for itself
A supplier COA is a claim, not evidence. For a first order, send a sub-sample to an accredited laboratory and confirm dry solids, carbohydrate composition by HPLC, reducing sugars, heavy metals and microbiology. The cost is small next to a container of syrup, and the gap between supplier and independent results tells you how much you can trust that supplier’s future paperwork.
Score suppliers on the same protocol
- Run identical tests on identical matrices, at the same time.
- Score spec compliance, colour stability, browning, sweetness balance and consistency between the two batches each supplier sends.
- Weight the scores to your priorities rather than averaging blindly.
- Keep the raw data, not just the verdict, so the decision can be defended later.
Two visibly different batches from the same supplier before you have paid for a container is useful information. It tells you what consistency to expect when the order is large.
Frequently Asked Questions
How much sample should I request?
A practical request is 1–5 kg so you can run a genuine pilot. Ask for two separately packed sub-samples, each matched to its own COA, so you can check batch-to-batch consistency.
Which lab test matters most?
For functionality, dry solids and carbohydrate composition are the most useful. For import compliance, heavy metals and microbiology are the fields regulators examine first.
Can I rely on the supplier’s COA alone?
Not on a first order. Independently verify at least one batch, then use the supplier COA as the routine record once you have confirmed it is accurate.
What if the sample and COA do not match?
Treat it as a failed qualification rather than a clerical error. Ask for a batch-linked resample, and do not scale the order until the sample, COA and independent results agree.
