Liquid sweeteners are a logistical category of their own. A pallet of syrup weighs twice as much as the same volume of most foods. It thickens as it cools, can crystallize in a cold container and demands food-grade handling at every transfer. Exporters who master this get repeat orders; those who wing it get claims. Here is the playbook.
Why Syrup Is Different From Every Other Food Cargo
- Weight: syrup sits at 1.35–1.45 g/ml, so a 20-foot container maxes out on weight long before volume.
- Viscosity: below 20°C many syrups become difficult to pump; above 60°C they caramelize. The handling window is real.
- Crystallization: glucose, maltose and maltitol syrups can seed crystals on the container walls in transit — a claim waiting to happen.
- Hygiene: anything that touches the syrup must be food-grade; a rusty drum liner is a full-lot loss.

Cold Crystallization: The Silent Killer
Most sweetener claims come down to one event: a container that sat on a cold deck, in a winter port or behind a customs hold while the syrup cooled below its crystallization point. Once crystals seed, they do not go away at room temperature — the syrup needs heating and agitation to recover. Practical rules:
- Specify a minimum transit temperature in the contract and the supplier’s responsibility to load only when the syrup is fully melted and homogenous.
- Choose reefer or insulated containers for winter transits through cold climates.
- Confirm the syrup’s crystallization onset temperature on the COA — a low-DE glucose syrup crystallizes far sooner than a high-DE one.
- Advise your warehouse to store drums and totes above 15–20°C and to warm them before dispensing.
Container Planning and Loading
Weight is the first constraint. A 20-foot container of syrup in drums or totes fills at 60–70% of its cubic capacity because the axle limit is reached first. That means the loading plan is a weight puzzle, and the supplier must certify the load plan, pallet count and lashing before departure. For bulk, the flexitank route avoids the weight penalty of steel packaging entirely.

Sampling and Quality on Arrival
Even a perfect shipment deserves a verification step. On arrival, check the syrup temperature, pull a sample from the bottom and top of the tank (settling and crystallization show up differently), confirm Brix against the COA, and inspect seals on every drum or tote. Retain samples from each lot — if a downstream claim ever appears, your defence is the retained sample, not the invoice.
