Nanchang mixed noodles — the saucy, street-style bowl — are the newest regional classic chasing global shelves. 🍜 The export version needs moisture discipline that street food never worries about.
The Moisture Math
Cooked noodle lines fail in transit when water activity climbs: mould, mush, or the dreaded stuck-together brick. Export formulas target a moisture/water-activity band that survives six months at 30°C.
| Control | Target | Purpose |
|---|---|---|
| Water activity | < 0.85 | No mould at ambient |
| Moisture | Spec band | Texture & shelf life |
| Sauce pack | Separate pouch | Flavour stability |
| Retort option | Fully sterilised | Extended shelf life |
Buyer Checklist
- 🌡️ Run a storage test at 30°C before committing
- 📦 Prefer separate sauce pouches for long journeys
- 🧾 Confirm the moisture spec survives your warehouse, not just the factory
Regional food, global shelf — that is the trade flow that keeps growing. 📈
Frequently Asked Questions
Why do cooked rice noodles fail in transit?
When water activity climbs, cooked noodles develop mould, mush or stick together, so export formulas must target a stable moisture band.
What moisture target suits rice noodle exports?
Aim for a moisture and water-activity band that resists microbial growth while keeping the noodle texture intact.
Is Nanchang mixed noodles suitable for export?
Yes, provided the export version applies the moisture discipline that street-fresh versions do not need.
