A certificate of analysis is the single most useful document a syrup buyer receives, yet it is often filed without a real read. The COA is a batch-specific record of what was actually shipped, and it is the only practical way to confirm that a tanker or a stack of drums matches the material you approved at trial. This guide explains which figures on that sheet change your process, and which are background noise.
Why the COA Outranks the Datasheet
A product datasheet describes the grade a supplier intends to sell. A COA describes one specific lot. When the two disagree, the COA wins, because that is the material now sitting in your tank. Always match the batch number or lot code on the document to the code printed on the drums or the tanker paperwork before accepting delivery.
Brix and Dry Solids: The Yield Number
Brix is an approximate measure of dissolved solids, expressed as degrees Brix, and it usually tracks closely with total dry solids. For bulk syrups, common delivery bands sit around 65 to 77 Brix for liquid sucrose and lower for many glucose syrups once viscosity is taken into account. Brix is the figure that determines how much sugar you actually bought: a lot delivered at the bottom of the band carries less sweetening power per tonne than one at the top. Refractometric Brix should be read alongside the method used, since refractive index, hydrometer and oven-dry solids can diverge slightly.
DE: What the Number Means
Dextrose equivalent expresses how far a starch has been hydrolysed, on a dry basis, with pure dextrose at 100 and unhydrolysed starch near zero. It is not a sweetness scale, but it correlates with one. A 42 DE glucose syrup is appreciably less sweet than sucrose and contributes more body, while a 60 DE syrup is sweeter and less viscous. DE also hints at fermentability and hygroscopicity, so it matters for yeast-raised systems and for products that must resist moisture pickup.
Colour and the Other Lines
Colour is usually quoted in ICUMSA units or as a descriptive band such as water white or light straw. It rarely changes sweetness, but it can change the appearance of clear beverages, hard candy and pale sauces. Buyers should also scan pH, ash or conductivity ash, sulphur dioxide where declared, and microbiological limits. These are the fields that most often explain a batch that behaves oddly despite sitting inside the Brix and DE bands.
Reading the Sheet Like a Buyer
- Confirm the lot code ties to your delivery.
- Check that Brix, DE and colour fall inside the agreed specification, not merely somewhere on the datasheet.
- Compare the current lot against the retained approval sample.
- Note which method the lab used for solids, since methods are not interchangeable.
- Keep counter-samples so any dispute can be settled with evidence rather than memory.
Numbers That Are Merely Supporting
Viscosity, turbidity, specific gravity and packaging details are useful context but should not drive an acceptance decision on their own. Where a parameter is critical to your line, define it in the purchase specification and require it on every COA. Where it is not, do not let it distract from the headline values.
Red Flags Worth Escalating
- A COA that is not batch specific, or that quotes a generic “typical” figure.
- Brix or DE reported as “as tested at plant” without a numeric result.
- Missing microbiological or ash data for a grade where your market requires it.
- Colour drifting upward lot after lot, which can signal a refining change.
Frequently Asked Questions
Is a higher Brix always better value?
Not automatically. You pay for solids, so a higher Brix can be better value per tonne, but very high solids raise viscosity and handling demands. Match the Brix band to your pumps, tanks and dosing accuracy.
Does DE tell me the sweetness directly?
Only roughly. DE indicates the degree of hydrolysis and correlates with sweetness, but the actual perceived sweetness also depends on the sugar spectrum. Use DE as a guide and confirm sweetness in your own application trial.
Should I accept a COA for the whole shipment or per container?
Where a shipment is blended from multiple production lots, ask for a COA per lot and, where practical, sampling per container. A single sheet covering several lots is weaker evidence than lot-level data.
What if the COA is inside spec but the syrup behaves differently?
Compare the retained sample, check storage history and confirm the methods used. Behaviour can shift through temperature, age or inversion even when Brix and DE look normal, so document the change and raise it with the supplier while you still have a counter-sample.

Our tip from experience with syrup COA: agree on the specification in writing before signing anything. ✍️
We started small with syrup COA and scaled after two stable containers. Patience pays. 📈
We have been importing syrup COA for three years now. Biggest lesson: test every batch, never trust the first order. 📦
