Glucose Syrup 43 DE vs 60 DE: Matching DE to Your Application

Glucose Syrup 43 DE vs 60 DE: Matching DE to Your Application

Two glucose syrups can share the same name, the same supplier and nearly the same specification sheet, yet behave like different ingredients on the line. The difference usually sits in one number: dextrose equivalent. The 43 DE and 60 DE grades are the workhorses of the category, and choosing between them is one of the most consequential formulation decisions a buyer or developer makes. This comparison gives the technical picture and, more importantly, a practical way to match each grade to the job.

What DE Actually Measures

Dextrose equivalent is a measure of reducing power on a dry basis, used as a proxy for the average degree of starch hydrolysis. Pure dextrose scores 100; unhydrolysed starch sits near zero. A 43 DE syrup therefore contains a broader spread of larger saccharides, while a 60 DE syrup has been broken down further into shorter chains and more simple sugars. That shift in molecular size drives almost everything else, including viscosity, sweetness, hygroscopicity and fermentability.

The 43 DE Profile: Body Before Sweetness

A 43 DE glucose syrup is the classic all-rounder for texture. It is moderately viscous, only mildly sweet, and holds a good balance between water-binding and humectancy. It resists crystallisation well, which makes it useful wherever sucrose would otherwise grain out, and it contributes bulk without dominating flavour. Typical homes include confectionery such as chewy candies and nougat, bakery fillings, icings, jams and general sauces where a soft, rounded body is wanted. Because it is less hygroscopic than higher-DE grades, 43 DE also tends to keep crisp or dry products from becoming tacky too quickly.

The 60 DE Profile: Sweetness and Flow

A 60 DE syrup is sweeter, less viscous and more hygroscopic. It pours more readily at ambient temperature, ferments more completely, and browns more eagerly under heat because of its higher content of reducing sugars. Those traits make it a natural fit for applications where sweetness and easy handling matter more than heavy body: soft drinks, cordials, sorbets, fermented products, and some processed meats where a faster-acting sugar source is useful. The trade-off is that it can pick up moisture from the air, so packaging and storage for dry blends need more care.

Property 43 DE 60 DE
Relative sweetness Lower, around 0.4 of sucrose Higher, around 0.5–0.6 of sucrose
Viscosity Higher at equal solids Lower, easier to pump
Body / mouthfeel Pronounced Lighter
Crystallisation control Strong Moderate to strong
Hygroscopicity Moderate Higher
Fermentability Lower Higher
Browning tendency Lower Higher
Buyer tip: never compare two quotes on DE alone. Delivered solids, colour band and ash load can change the effective performance and the cost per unit of functionality.

Matching DE to the Application

Begin with the property your product cannot compromise on. If the goal is chewiness, opacity or a long-lasting soft texture, 43 DE is usually the safer starting point. If the goal is a clean, pourable sweetness and fast dissolution in a liquid system, 60 DE is likely to serve better. Frozen desserts often sit between the two, where a blend can deliver enough body to resist ice-crystal growth while keeping the mix sweet and fluid.

It also pays to think about the process, not just the finished product. A high-viscosity 43 DE syrup may need heated storage and slower pumping, while a 60 DE grade may be easier on logistics but more sensitive to humidity in powdered blends. The cheapest grade on paper becomes expensive if it forces changes to tanks, pumps or packaging.

Blending and Fine-Tuning

Many manufacturers do not choose one extreme. Blending 43 DE with 60 DE lets a formulator dial in sweetness and body independently, and it can be a cheaper route to a target than shopping for an exotic single grade. Keep the blend ratio fixed in the specification and re-verify viscosity and colour whenever either component changes, because a small change in the mix can shift texture more than expected.

Running a Sound Comparison Trial

  • Hold solids, pH and process conditions constant so only DE varies.
  • Measure viscosity at the same temperature and solids, not the same Brix on paper.
  • Assess sweetness with a trained panel or an established method rather than by guesswork.
  • Check colour and flavour after your full thermal process.
  • Watch texture after storage, since crystallisation and moisture migration appear over time.
  • Retain sealed samples of each candidate for later reference.

Frequently Asked Questions

Can I simply substitute 60 DE for 43 DE?

Usually not one-for-one. The higher-DE syrup is sweeter and thinner, so an equal-weight swap will raise sweetness and reduce body. Adjust the dosage and, where texture matters, consider a blend.

Which grade is better for hard candy?

Lower-DE syrups are generally preferred for hard candy because they limit crystallisation and help control texture. Very high-DE grades can make the glass more hygroscopic and prone to sticking.

Does a higher DE always ferment faster?

Broadly yes, because more of the sugar is in a form yeast can use quickly. Actual fermentation also depends on the specific sugar spectrum and the process conditions, so confirm in a pilot run.

Why does 60 DE brown more easily?

It contains more reducing sugars, which participate in browning reactions under heat. That can be desirable in some products and a problem in others where a pale colour must be maintained.
