Fructose is sweeter than sucrose at room temperature and highly hygroscopic, which makes it useful in bakery but also changes browning and texture in ways formulators must plan for.
Faster browning
Fructose participates readily in Maillard browning, which can be an advantage for colour and flavour but risks over-browning at the surface. Reduce oven temperature slightly or adjust the sugar blend when substituting.
Moisture and softness
- Fructose holds moisture, keeping baked goods soft for longer.
- The same property can cause stickiness in dry applications.
- Water activity shifts, which affects shelf life and microbial safety.
Sweetness matching
Because fructose is sweeter than sucrose, replace on a sweetness basis rather than kilo for kilo, or the product will taste too sweet. Adjust the blend and validate with a sensory panel.
