Dumplings, baozi and dim sum are the fastest-growing frozen export from China — and the most cold-chain sensitive. 🥟 One warm handoff and the whole container is a claim.
The Three Handoffs That Decide Quality
Blast freezing to -18°C core quickly preserves texture; the loading warehouse must hold temperature; and the receiving end must have a verified cold chain. The spec is only as good as its weakest handoff.
| Check | Spec | Why |
|---|---|---|
| Core temp after blast | -18°C or below | Texture & safety |
| Freezer storage | -18°C | No fluctuation |
| Loading time | Under 30 min open | Minimise temp rise |
| Reefer set-point | -18°C (as per OEM) | Contract-bound |
Buyer Must-Dos
- 🧊 Demand a temperature recorder in the container
- 📦 Specify cold-stable packaging — ice crystals in the pouch mean a broken chain
- 🧾 Ask for the loading photo log with time stamps
Frozen is unforgiving, but it rewards buyers who enforce the handoffs. ❄️
