Syrup batch drift: how do you control colour and taste consistency?
Share this article:
Question for everyone sourcing liquid sweeteners 🧃:
How do you control colour and taste drift between syrup batches? I keep seeing the same issue: batch one looks like golden honey, batch three arrives lighter (or darker), and the taste swings enough that your product team notices. The certificate says “colour: max 100 ICUMSA” but nobody actually checks it at arrival.

What actually causes drift
- 🌡️ Processing temperature — slightly hotter runs caramelise more, darkening colour.
- 🌾 Raw starch variation — different crop lots change clarity and colour.
- 💧 Moisture/solids fluctuation — brix drift changes sweetness and body.
- 🧪 Loose acceptance specs — if your spec only says “max colour”, batch-to-batch spread is wide.
| Spec you should demand | Tight vs loose |
|---|---|
| Colour (ICUMSA) — max AND typical | Tight range, e.g. 60–80, not just “max 100” |
| Brix / dry substance | ±0.5%, not ±2% |
| DE (dextrose equivalent) | Exact window per product |
| pH | Narrow band |
| Taste panel | Written reference sample kept per lot |
My checklist before trusting a new supplier
- 🧪 Ask for 3 consecutive batch COAs — if they differ wildly, that’s your answer.
- 📦 Request reference samples — a retained sample per production date.
- 🔬 Test at arrival — brix and colour are cheap to check.
- 🤝 Write drift limits into the contract — rejection rights for out-of-spec batches.

Over to you: has batch drift burned you before? Do you test at arrival or trust the COA? And which suppliers keep the tightest specs? Let’s swap notes below 👇

Arrival testing is the only thing that saved us. We added a brix + colour check at the port warehouse and rejected two batches in year one. Now every COA matches what lands. Spec tightness is everything.
We now ask for the retained sample photo per batch before loading. Takes the supplier 5 minutes and killed the ‘what were they thinking’ conversations. Colour range in the spec should be a band, not a max.
