Sorbitol crystallising in gummies over time — how do you prevent it?
Share this article:
We have seen polyol gummies develop a white bloom or a firm, grainy edge after a few months in warm storage. Is this a sorbitol issue, or something else in the system?
- Do you add a crystallisation inhibitor or switch polyols?
- Does pectin behave better than gelatin here?
- What water activity or moisture target keeps it stable?
If you solved this, we would love to know whether the fix was a formulation change, a packaging change, or both.
