Frozen dumpling suppliers: how do you judge freezing quality?
A question for frozen food buyers 🥟:
How do you actually judge a dumpling supplier’s freezing quality? Every factory says “we use IQF.” But I’ve received “IQF” dumplings that boil up mushy, and slow-frozen ones that were somehow fine. The label tells you less than you’d hope — so what do you actually check?
How to verify freezing quality
- 🧊 Ask for the freeze curve — time from forming to core -18°C. Under 30 minutes is good; under 15 is excellent.
- 🔬 Cook-test before you commit — boil a sample from the actual production lot, not the showroom batch.
- 📦 Check for ice crystal damage — mushy, watery texture after cooking is the giveaway.
- 🌡️ Inspect the cold chain records — a clean temperature log end to end.

We ask for the freeze curve in the RFQ now. One factory quoted IQF but the curve showed core -18C at 55 minutes. Cook test confirmed mushy. Moved on, no regrets. 15 minutes is the bar for us.
Cook test from the actual container lot — not the showroom batch — caught a supplier who swapped filling grade mid-season. Price looked too good and the cook test explained why. Verify before you commit, always.
