Chicharon shelf life — what packaging actually survives ocean freight? We all know the failure mode: arrives soft, oily, or with that faint stale taste. But I’ve seen chicharon arrive crisp after 30 days at sea, and arrive soggy after a “10 day” shipment. The difference is almost always packaging, not distance.
What actually works

My checklist when sampling
- 🔬 Ask for O₂ levels in the finished pack — under 2% is a good sign.
- ⏳ Demand real-time shelf-life data, not just accelerated tests.
- 🧪 Check peroxide value on arrival — rancidity is the silent killer.
- 🧂 Match seasoning to your market — salt levels that work in Asia can feel off elsewhere.
Also worth noting: chicharon’s moisture spec matters. Above ~3% and it goes soft even with good packaging. The factory should be hitting under 2–3% consistently. 📉

O2 under 2% is non-negotiable for us now. First supplier shipped air-packed and the shelf life collapsed at week six. Second supplier gas-flushed and we cleared 12 months. Same recipe, same factory, different packaging.
Peroxide value at arrival tells the truth. We started testing every lot and it flagged rancidity our taste panel hadn’t caught yet. Now it’s in the contract — over 10 meq/kg and it’s a rejection.
