Sugar taxes, front-of-pack labelling and consumer demand have pushed sugar reduction from a novelty to a baseline requirement. The challenge is that sugar does more than sweeten: it carries body, masks bitterness and shapes the finish. Replace it carelessly and the drink tastes thin or metallic.
Build a blend, not a swap
Most successful light drinks use two or three sweeteners together. High-intensity sweeteners like stevia or sucralose supply the sweetness, while a bulk sweetener such as erythritol or maltitol restores body. A small amount of the original sugar often stays to round off the profile.
- Erythritol: clean taste, near-zero calories, low laxative effect. Can add a slight cooling note.
- Maltitol: sugar-like sweetness and body, good for syrups, but higher GI impact and laxative threshold.
- Stevia (Reb M): high sweetness, clean label, but needs masking at high doses.
Watch the mouthfeel
Reducing solids lowers viscosity and changes how flavour releases. Gums, soluble fibre or a touch of polydextrose can restore the weight that sugar used to provide. Carbonation can amplify or hide these effects, so always taste the finished, chilled product.
Labelling implications
Polyols must be declared with their energy value, and some markets require a laxative warning above set thresholds. Stevia and erythritol carry different regulatory stories market by market. Check the destination rules before locking a recipe, because a label change can force a reformulation.
