Maltitol Glycemic Index and Net Carbs: Claims That Are Safe to Make

Maltitol Glycemic Index and Net Carbs: Claims That Are Safe to Make

Maltitol has become a workhorse bulking sweetener for sugar-free and reduced-sugar products, and with that popularity comes a predictable request from marketing teams: what can we say about its glycemic effect and carbohydrate contribution? The honest answer is that maltitol supports several defensible claims, but a few widespread statements cross the line into overstatement. This guide separates the claims that withstand scrutiny from the ones that invite regulatory trouble, and it explains the labelling conventions behind both.

Why maltitol behaves differently from sucrose

Maltitol is produced by hydrogenating maltose, the disaccharide released when starch is hydrolysed. The resulting polyol has roughly 0.8 to 0.9 times the sweetness of sucrose and a very similar bulk, which is why it replaces sugar almost one-for-one in chocolate, gum and baked goods. The important nuance is that maltitol is not inert. Some of it is hydrolysed in the small intestine to glucose and sorbitol, and the glucose fraction is absorbed. That is why the glycemic index of maltitol is low but not zero, commonly reported at around 35 on the glucose scale where glucose is set to 100.

Glycemic index versus glycemic load

Glycemic index describes how quickly a fixed amount of available carbohydrate raises blood glucose. Glycemic load combines that value with the amount actually eaten, which is often the more useful number for a real portion of sugar-free chocolate or a cereal bar. A product can carry a low-GI sweetener and still deliver a meaningful glycemic load if the portion is large or if other rapidly digested carbohydrates are present. Any manufacturer claim should therefore be based on the finished product, tested as consumed, rather than on the raw material specification alone.

Sweetener Approximate GI (glucose = 100) Notes
Glucose 100 Reference
Sucrose around 65 Disaccharide of glucose and fructose
Maltitol around 35 Partly hydrolysed to glucose
Xylitol around 13 Largely non-glycemic
Erythritol close to 0 Absorbed but not metabolised

How net carbs are counted

Net carbohydrate figures are a labelling convention rather than a single global standard. In the United States it is common to subtract sugar alcohols from total carbohydrate, which can make a maltitol-sweetened product appear to carry almost no net carbs. Some low-carb programmes only credit a portion of maltitol because of its partial digestion, and health authorities in other regions treat polyols differently again. In the European Union, polyols are declared separately and assigned an energy value of roughly 2.4 kcal per gram, compared with about 4 kcal per gram for sucrose. The practical point for exporters is to state the method used and keep it consistent across the range, because mixing conventions between markets creates confusion and undermines trust.

Claims that are generally safe to make

  • Describing the product as containing no added sucrose or no sugar, where the recipe genuinely qualifies under local rules.
  • Stating that the sweetener has a lower glycemic index than sucrose, supported by published data.
  • Positioning the product as reduced-calorie relative to a full-sugar equivalent, with the energy values shown.
  • Noting that the product is tooth-friendly, since polyols are not fermented by oral bacteria in the same way as sugar.
  • Using structure and function wording such as suitable for people managing their sugar intake as part of a balanced diet.
Buyer tip: avoid disease claims such as “diabetes-safe” or “does not affect blood sugar”. Maltitol still contributes glucose and calories, and those statements are both inaccurate and, in most markets, illegal on a food label.

The digestive-tolerance caveat

Polyols are poorly absorbed, and maltitol sits on the higher end of the fermentable group. Larger portions can cause bloating or a laxative effect, which is why many markets require a warning statement when the product is likely to be consumed in quantity. A responsible label pairs any glycemic benefit with clear portion guidance, and the specification should record the polyol content per serving so that the warning threshold can be calculated reliably.

Frequently Asked Questions

Is maltitol sugar-free in the legal sense?

Maltitol contains no sucrose and is a polyol, so recipes built entirely on it can qualify for a no-sugar claim, but it is not calorie-free. Declarations of polyol content and energy still apply.

Can we claim maltitol has a zero glycemic index?

No. Maltitol is partially digested to glucose, so its glycemic index is low, commonly cited around 35, rather than zero. Zero-glycemic claims are only appropriate for sweeteners such as erythritol.

Should net carbs count all maltitol as zero?

It depends on the market and the diet philosophy. Many US labels subtract all sugar alcohols, while low-carb programmes often credit only part of the maltitol because of its partial digestion. Disclose the method used.

What evidence should support a glycemic claim?

Keep published glycemic index data, a product-specific test if the claim is product-level, the batch specification and the label artwork together. Regulators increasingly expect the claim to match the food as eaten, not just the ingredient.
