Fructose Syrup Density and Solids Conversion: A Practical Calculator Guide

Fructose syrup is bought, sold and dosed on a dry-solids basis, yet almost everything you can physically measure, from a tank gauge to a flow meter, reports volume. Bridging that gap accurately is what keeps recipe costs and product consistency under control. This guide explains the relationships between density, Brix and dry solids, and shows how to build a simple calculator that works in a spreadsheet.

Getting the vocabulary straight

Conversions go wrong when terms are used loosely. Keep these definitions separate:

  • Density: mass per unit volume, typically expressed in kilograms per litre or grams per millilitre.
  • Specific gravity: density relative to water at a stated temperature, so it is dimensionless.
  • Brix: originally the sucrose concentration of a solution by mass, widely used as an approximate measure of dissolved solids.
  • Dry solids: the total dissolved solids content, usually given as a percentage by mass.
  • Baume: another scale related to specific gravity, still seen on some trade documents.

For fructose syrup, Brix is a close but not exact proxy for dry solids, because the dissolved material is a blend of fructose, glucose and higher saccharides rather than pure sucrose. For costing the difference is usually small; for tight formulation, use the supplier’s solids figure.

The three relationships you need

Almost every calculation reduces to these:

  1. Density = mass divided by volume
  2. Mass of dry solids = volume multiplied by density multiplied by the solids fraction
  3. Volume for a target solids = target solids divided by the product of density and solids fraction

Worked example

Suppose a tank holds 20,000 litres of syrup with a density of about 1.34 kg/L and a dry solids content of 71%.

  • Mass of syrup = 20,000 multiplied by 1.34 = 26,800 kg
  • Mass of dry solids = 26,800 multiplied by 0.71 = 19,028 kg

If a recipe instead calls for 1,000 kg of dry solids, the volume required is roughly 1,000 divided by the product of 1.34 and 0.71, which is about 1,050 litres.

Note how much the solids fraction matters: treating the syrup as if it were pure sugar would overstate the usable solids by nearly a third.

Estimating density from Brix

When a supplier gives Brix rather than density, published sucrose tables convert Brix to specific gravity, and a small correction factor is applied for fructose-glucose syrups. The values below are indicative and intended to show the trend rather than to replace a measured figure from your supplier.

Brix (approx.) Typical density (kg/L at 20C) Approx. dry solids (%)
42 1.19 42
55 1.26 55
65 1.32 65
71 1.36 71
77 1.40 77

Temperature correction

Density and refractive index both change with temperature, so a reading taken on a warm tanker and compared with a table at 20C will be off. Refractometers are often temperature-compensated, but a hydrometer or density meter is not. Record the temperature with every reading and apply the supplier’s or a recognised correction table before using the number. For trade settlement, agree the reference temperature in the contract.

Building the calculator

A useful sheet needs only a few inputs and outputs. Provide cells for volume, measured density or Brix, dry solids percentage and temperature. Then compute syrup mass, dry solids mass and the sugar-equivalent mass if you are comparing against sucrose. Add a reverse calculation so you can enter a target solids figure and read back the volume or mass to dose. Finally, include a temperature-correction row and lock the formula cells so nobody overwrites them by accident.

Buyer tip: ask the supplier to state density at a reference temperature on the certificate of analysis. It turns a rough estimate into a defensible number for invoicing and recipe costing.

Errors that cost money

  • Confusing weight-by-weight with weight-by-volume percentages.
  • Applying a pure-sucrose Brix table to a fructose-glucose syrup without correction.
  • Ignoring temperature drift between the tanker and the laboratory.
  • Assuming F42 and F55 share the same density and solids at a given Brix.
  • Using nominal container volume instead of the actual net weight on the packing list.

Frequently Asked Questions

Is Brix the same as dry solids in fructose syrup?

It is close but not identical. Brix is calibrated on sucrose, while fructose syrup is a blend of sugars, so use the supplier’s solids figure when accuracy matters.

What density should I assume for F55 syrup?

It varies with solids and temperature, but high-solids syrup commonly falls in the region of 1.3 to 1.4 kg/L. Always use the measured or certified figure rather than a textbook value.

How do I convert a recipe from sugar to syrup?

Work on a dry-solids basis. Convert the sugar weight to an equivalent syrup solids weight using the sweetness ratio, then convert that solids weight to syrup volume using density and solids percentage.

Does temperature really change the calculation?

Yes. Density falls as temperature rises, so a tank measured hot contains less mass per litre than the same tank measured cold. Correct to an agreed reference temperature before settling or dosing.
