# Sweetener Cost Engineering: Balancing Price, Mouthfeel and Labels

Sweetener reformulation is usually triggered by cost, regulation or a health claim — and almost always constrained by the other two. The goal is rarely the cheapest recipe; it is the best balance of cost, taste and label for a specific market.

Compare on the right basis
--------------------------

Sweeteners differ in potency and in the water or bulk they carry, so cost per kilogram is misleading. Compare cost per unit of sweetness delivered in the finished product, and include the cost of any bulking agents needed to replace lost solids.

The three levers
----------------

- **Price:** raw material cost and supply stability.
- **Mouthfeel:** body, sweetness curve and aftertaste.
- **Label:** consumer acceptance and regulatory fit.

Pulling one lever usually moves the others. Cheaper intense sweeteners may need masking and bulking, eroding the saving. A premium clean-label blend may cost more but unlock a price tier and a claim.

**Buyer tip:** model the full landed cost, including bulking agents, processing changes and shelf-life risk — not just the sweetener line.

Reformulate deliberately
------------------------

Change one variable at a time and test in the real application. Keep a reference sample of the original. Sensory panels and accelerated shelf-life tests catch the drift that spreadsheets miss.

Lock in stability
-----------------

Once the blend is chosen, secure supply and pricing where possible, and document the specification. A reformulation that saves a cent but risks a stockout is not a saving.
