# Replacing Sucrose with HFCS: Sweetness Matching and Cost

Switching from sucrose to HFCS is often a cost exercise, but it is also a formulation change. Done carelessly it alters sweetness, body and browning; done properly it cuts cost without a noticeable difference.

Match on sweetness, not weight
------------------------------

HFCS and sucrose differ in sweetness and in the water they carry. Replace on a sweetness-equivalent basis and adjust total solids, or the finished product will drift in taste and texture.

Check the interactions
----------------------

- Browning: fructose browns faster, so watch baked and cooked products.
- Freezing: fructose lowers the freezing point, affecting frozen desserts.
- Hygroscopicity: fructose holds moisture, which can help or hurt.

**Buyer tip:** model cost per unit of sweetness, including any bulking or solids adjustment, before declaring a saving.

Validate before switching
-------------------------

Run a production trial and a shelf-life check rather than switching on a spreadsheet. The cost benefit is real, but only if the product still tastes and performs as expected.
