# Maltitol Syrup vs Crystalline Maltitol: Choosing the Right Form

Maltitol is supplied either as a syrup or as a crystalline powder, and the two are not interchangeable in every application. The choice affects sweetness, water activity, processing temperature and the texture of the finished product.

Composition and sweetness
-------------------------

Maltitol syrup contains a mixture of maltitol with other polyols and hydrogenated oligosaccharides, which gives it a lower relative sweetness than the crystalline form. Crystalline maltitol is typically around 90% as sweet as sucrose, while syrups vary by grade. Where full sugar replacement is required, the crystalline form is usually easier to match.

Processing differences
----------------------

Crystalline maltitol dissolves readily and contributes to structure, which makes it useful in chocolate, tablets and baked goods. Maltitol syrup brings plasticity and humectancy, so it suits chewy confectionery, fillings and coatings where a softer texture is wanted.

Water activity and shelf life
-----------------------------

- Syrups bind water more effectively and help control water activity
- Crystalline maltitol can crystallise if the recipe is not balanced
- Syrup grades reduce the risk of grainy texture in chewy products
- Both forms are non-cariogenic and suitable for sugar-free labelling

Practical selection guide
-------------------------

For chocolate and compressed tablets, start with crystalline maltitol. For gummies, chewy candy and cereal binders, a maltitol syrup with a defined polyol distribution is usually the better base. Blends are common when both structure and humectancy are needed.

Documentation to request
------------------------

Ask for the certificate of analysis with the polyol distribution, moisture, ash and heavy metals, plus the specification sheet for the exact grade. The grade matters more than the generic name on the label.
