# High-Fructose Corn Syrup F55: Specifications for Beverage Formulators

F55 high-fructose corn syrup is the workhorse sweetener of the beverage industry, prized for sweetness, stability in acid, and cost per unit of sweetness. Understanding its specification lets a formulator predict how a recipe will behave across a production year.

What the numbers mean
---------------------

- **Fructose to glucose ratio:** F55 means roughly 55% fructose, 45% glucose on a dry basis. The ratio drives sweetness and the tendency to brown.
- **Dry solids:** usually around 77%, affecting viscosity, storage and dosing.
- **Colour and ash:** low colour protects clear drinks; low ash reduces off-flavours and haze.
- **Sulphur dioxide:** controlled to avoid taste and regulatory issues.

Sweetness and acid stability
----------------------------

Fructose is sweeter than sucrose at cold temperatures, which is why colas taste right when chilled. It also resists acid hydrolysis, keeping the drink stable through shelf life. That combination is why F55 dominates carbonated soft drinks.

**Practical tip:** store F55 warm enough to pump easily but not so warm that colour develops. Consistent storage temperature stabilises dosing.

Haze and compatibility
----------------------

F55 blends cleanly with other syrups but can interact with some concentrate ingredients to cause haze. Test blends, not just the syrup alone. Clear beverages are unforgiving of incompatibility.

Regulatory framing
------------------

Different markets treat HFCS differently for labelling and, in some cases, taxation. Confirm the destination’s stance before designing the recipe, because a regulatory reclassification can force a reformulation mid-season.
