# HFCS Storage and Handling: Temperature, Colour and Viscosity

HFCS is stable but not indifferent to how it is stored. Temperature changes its viscosity, heat darkens it, and poor tank hygiene invites fermentation. Good handling protects colour, taste and dosing accuracy.

Temperature and viscosity
-------------------------

Cooler syrup is thicker and harder to pump; warmer syrup flows easily but develops colour faster. The practical answer is a moderate, stable storage temperature that keeps pumping easy without accelerating browning.

Tank hygiene
------------

- Keep tanks sealed and clean to prevent microbial growth.
- Avoid water ingress, which dilutes solids and feeds spoilage.
- Rotate stock on a first-in, first-out basis.

**Practical tip:** log temperature with every batch. Stable storage is what keeps dosing and colour consistent.

Colour and quality
------------------

Colour is the simplest early warning of heat damage. For clear beverages it matters directly, so monitor it and fix storage before a whole tank is affected.

Handled well, HFCS is one of the most consistent sweeteners in a plant; handled carelessly, it is an avoidable source of variation.
