# Seasoning and Glaze Syrups for Roasted Nuts and Seeds

Glazed nuts live or die on adhesion and crunch. The syrup system has to stick the seasoning, survive roasting without burning and stay crisp after packing.

Building the glaze
------------------

A typical glaze combines a syrup for body, a sugar for crunch and a small amount of oil or emulsifier for spread. Glucose syrup reduces stickiness and controls crystallisation, while maltose-rich syrups add a milder sweetness and a harder final bite.

Adhesion
--------

Seasoning sticks best to a tacky surface. Apply the glaze while the nuts are still warm and tumbling, then dust the seasoning in stages rather than all at once. Particle size matters: finer powders adhere more evenly but can clump.

Roasting profile
----------------

- Lower the air temperature and extend time to avoid burning the glaze
- Turn the bed continuously for even coating
- Watch colour development in the last third of the roast
- Cool on a mesh to let steam escape

Shelf life
----------

Moisture migration softens the glaze. Use a high-barrier film, include an oxygen absorber where appropriate and avoid packing while the product is still warm.

Scaling up
----------

Record glaze weight per kilogram of nuts, seasoning weight and roast curve. These three numbers make the process repeatable across batches and shifts.
