# Functional Beverages: Adding Vitamins and Minerals Without Off-Notes

Fortification is where a straightforward drink becomes a formulation puzzle. Vitamins, minerals and electrolytes all bring their own taste, solubility and stability problems, and a blend that tastes clean on day one can turn metallic or hazy within weeks.

Pick the right forms
--------------------

The salt form of a mineral determines how it tastes and how reactive it is. For example, some calcium and magnesium sources are far more soluble and less chalky than others. Choose the form for the drink’s pH and clarity target, not just the label claim.

- Water-soluble vitamins are easier to disperse but can degrade with light and heat.
- Fat-soluble vitamins need emulsification in clear drinks.
- Electrolytes are simple salts but drive taste at higher doses.

Control the off-notes
---------------------

Bitterness, chalkiness and metallic notes are dose-dependent. Masking them with acids, sweetness or flavour systems works, but masking agents can themselves change perceived sweetness. Build the flavour around the fortification, not on top of it.

**Practical tip:** run an accelerated shelf-life test with the full vitamin load. Potency and taste usually drift together.

Protect the claim
-----------------

Overages and label claims must match what is actually present at end of shelf life, which differs by market. Confirm the regulatory format early so the recipe does not have to be rebuilt after a label review.

Fortified drinks succeed when stability, taste and compliance are designed together from the first trial.
