# Syrup batch drift: how do you control colour and taste consistency?

Question for everyone sourcing liquid sweeteners 🧃:

**How do you control colour and taste drift between syrup batches?** I keep seeing the same issue: batch one looks like golden honey, batch three arrives lighter (or darker), and the taste swings enough that your product team notices. The certificate says “colour: max 100 ICUMSA” but nobody actually checks it at arrival.

![Comparing colour of different syrup batches](https://liangdusyrup.com/wp-content/uploads/2026/04/IMG_20230802_025621-scaled-1.jpg)Colour drift between batches is one of the most reported — and most preventable — syrup complaints. What actually causes drift
--------------------------

- 🌡️ **Processing temperature** — slightly hotter runs caramelise more, darkening colour.
- 🌾 **Raw starch variation** — different crop lots change clarity and colour.
- 💧 **Moisture/solids fluctuation** — brix drift changes sweetness and body.
- 🧪 **Loose acceptance specs** — if your spec only says “max colour”, batch-to-batch spread is wide.

My checklist before trusting a new supplier
-------------------------------------------

1. 🧪 **Ask for 3 consecutive batch COAs** — if they differ wildly, that’s your answer.
2. 📦 **Request reference samples** — a retained sample per production date.
3. 🔬 **Test at arrival** — brix and colour are cheap to check.
4. 🤝 **Write drift limits into the contract** — rejection rights for out-of-spec batches.

Do you test at arrival or trust the COA? And which suppliers keep the tightest specs? Let’s swap notes below 👇
