# Crystalline Fructose vs Liquid Fructose: Choosing the Right Sweetener

Fructose is available in two commercial forms: a liquid syrup and a crystalline solid. Both sweeten, but they behave differently enough that the choice is driven by product form and process, not just price.

Liquid fructose
---------------

Liquid fructose is typically a high-fructose syrup delivered by tanker or drum. It is easy to pump and blend at scale, ideal for beverages. You inherit the handling, storage and colour-control requirements of a syrup, and you pay to move water.

Crystalline fructose
--------------------

Crystalline fructose is a dry, high-purity solid, often above 98% fructose. It suits dry mixes, confectionery and applications where adding water is undesirable. It gives precise dosing and long shelf stability, but costs more per unit and needs dry storage.

- **Choose liquid for:** high-volume beverages, continuous blending, low freight per solid.
- **Choose crystalline for:** dry blends, moisture-sensitive products, precise low-dose sweetness.

**Buyer tip:** compare on a cost-per-unit-of-sweetness basis, not cost per kilogram, because the two forms differ in water and sweetness potency.

Moisture and texture effects
----------------------------

Fructose is hygroscopic, which helps keep baked goods soft but can cause stickiness in dry mixes. Crystalline form plus an anti-caking agent solves many of those handling issues; liquid form simply cannot be used where moisture is a problem.

Making the decision
-------------------

Start from the product form: if your process is wet, liquid usually wins; if it is dry or low-moisture, crystalline wins. Then confirm sourcing, cost and storage before committing.
