# Clean-Label Seasonings: Removing MSG and Artificial Additives

Clean-label demand has moved from niche to mainstream, and seasoning is where consumers notice first. Removing additives without losing the savoury punch is a formulation project, not a simple subtraction.

Replacing MSG
-------------

Umami can be rebuilt with naturally rich ingredients such as yeast extracts, hydrolysed vegetable protein, mushroom and tomato powders, and fermented seasonings. These bring their own flavour notes, so the blend has to be rebalanced, not just reformulated.

Colour and preservation
-----------------------

- Swap artificial colours for paprika, turmeric, beetroot or annatto.
- Replace synthetic preservatives with acid, salt or moisture control where the product allows.
- Use natural antioxidants such as rosemary extract for oil-rich snacks.

**Buyer tip:** agree the label wording and any “no added MSG” claim with local regulations before finalising the recipe.

Taste testing matters most
--------------------------

Clean-label blends often taste slightly different, and consumers notice. Run blind panels against the original and be prepared to accept a small taste shift in exchange for the label. Document the approved reference so production stays consistent.
