# Bulk Sweetener Sampling: What to Test Before You Buy

Sampling is where most supply problems can be caught early. A structured protocol turns a sample delivery into a decision with evidence behind it, rather than a guess based on price.

Before the sample ships
-----------------------

- Confirm the exact grade and specification, not just the product family
- Request the certificate of analysis for the production lot
- Check packaging, net weight and shelf life
- Agree the sample size needed for a representative bench trial

On arrival
----------

Record the lot number, date of receipt and condition of the packaging. Photograph any damage. Test dry solids, pH and colour on arrival, then store the sample as you would store a bulk delivery.

Bench trials
------------

Run the sample in your real recipe at full scale, not in a simplified model. Compare against your current supplier on sweetness, texture, colour and process behaviour. Score each attribute consistently across evaluators.

Documentation review
--------------------

- Specification sheet with test methods
- Allergen and GMO statements
- Heavy metals and microbiological limits
- Packaging declaration and pallet configuration

Decision criteria
-----------------

Price per dry kilogram, not per wet kilogram, is the correct basis for comparison. Add freight, duty, lead time and the cost of any process adjustment the new material requires.
