# Beverage Emulsions and Clouding Systems: Keeping Drinks Uniform

A drink that separates on the shelf looks broken even if it tastes fine. Emulsions and clouding systems exist to keep everything suspended and uniform, and their stability decides the visual quality of the product.

What clouding systems do
------------------------

Clouding agents give weight and opacity to drinks that would otherwise look watery, and they carry oil-soluble flavours and colours. A stable cloud is a fine, even dispersion that resists creaming and ringing.

Why emulsions fail
------------------

- **Ringing:** a ring of material at the neck as droplets rise.
- **Creaming:** larger droplets float to the top.
- **Flocculation:** droplets clump without fully merging.

These happen when droplet size is too large, the emulsifier is insufficient, or the density difference is too great. Homogenisation pressure and emulsifier choice are the main levers.

**Practical tip:** check stability under warm storage. Emulsions that look perfect at 4 °C can ring quickly at 40 °C.

Matching the system to the drink
--------------------------------

The oil phase, weighting agents and emulsifier must suit the drink’s pH, sugar level and target mouthfeel. A system that works in a high-sugar cola may behave differently in a low-sugar tea, so validate in the actual base.
